Enjoy a glass of sherry while learning to make authentic tapas at the Bodega Casa del Marques, a 19th-century palace built for a wine merchant. The elegant residence is decorated with period furnishings that lend it an ambiance so authentic that it feels as if you were transported to another time. While there, you will learn to make tapas, some traditional and others topped with surprisingly inventive ingredients. These small-plate snacks reflect the local cuisine and are typically served with a glass of sherry, especially in Jerez, which has been producing the fortified wine for more than 175 years. The exact tapas that you will prepare will depend on which ingredients are freshest and most flavorful. They might include fried fish, meatballs or something a bit more unusual such as stewed ox tail. Be sure to add favorite ingredients, as you will dine on the tapas afterwards.

OVERVIEW

Experience the Damajagua waterfalls in every way imaginable with a local guide leading the adventure. A hike through a jungle-like landscape will bring you to the waterfalls, whose source is the Damajagua River, a cool mountain stream. This breathtaking natural wonder contains numerous cascades of varying heights. You will jump off some of the waterfalls, negotiate other ones by sliding down slick rock chutes and swim in the sparkling pools at the base of all of them. Wooden walkways and steps connect many of the cascades, allowing you access that would be impossible otherwise. The river is known for its beautiful blue hue as it spills out of the mountains and carves its way through the rocky terrain. Steep limestone canyons line much of the Damajagua, making the scenery all the more memorable.

Enjoy an enlightening tour of Naples and folded pizza, a classic Neapolitan treat. Your panoramic drive will present views from affluent Posillipo Hill and of the imposing Castle Nuovo. The castle’s five towers make it one of Naples’ most recognizable landmarks. You will also see the Egg Castle, which holds a commanding position on the sea. In time, you will reach Spaccanapoli, a long street whose name means “Naples splitter,” a reference to it somewhat dividing the city in two. Here, you will visit the Jesuit church Gesú Nuovo and the Church of Santa Chiara, which was founded in 1310 and features an austere Provencal-Gothic style. To delve even deeper into daily life, you will walk through the narrow streets of Old Town, which UNESCO has declared a Cultural Heritage site. As you will discover, there is no better setting for an espresso and portafoglio or folded pizza, as the dish was invented in Naples.

This particular cheese, made from Grazalemeña sheep’s milk, is distributed nationally and exported to countries like the UK, USA, Japan, Italy, Sweden and Belgium. You will also browse a cheese museum with displays of cheese-making hand tools and exhibits detailing the history of cheese production in the area. Afterwards, you will enjoy a sampling that may include an emborrado cheese cured in olive oil and wheat bran. Other cheeses produced here are cured with fresh spices such as rosemary and paprika. To complement the experience, you will be served a glass of locally produced wine.

You will then board a public bus and enjoy a genuine slice of daily Latvian life on the way to the Vecmilgravis district. The guide will point out buildings constructed during the time that the Soviets occupied Latvia. Like several neighboring Baltic countries, Latvia gained its independence from the Soviet Union in 1991. The most historical building is the White Church. Built near the water during the late 18th century, the wooden Lutheran church features a tower that local fishermen have long used as a lighthouse of sorts to help them navigate. You’ll journey to the ancient place of Mayan pilgrimage known today as Chacchoben, also known as "The Place of Red Corn". At the pier, you’ll be greeted by a bilingual guide who will direct you to an air-conditioned bus. Onboard the bus your guide will brief you on the interesting history and unique attributes of this sacred Mayan site. Upon arrival at Chacchoben you’ll be surrounded by jungle. Your guide will escort you through the ruins, giving you a complete explanation of the sacred temples and other structures seen there. See original red paint on the stucco walls of one of the pyramids and the temple where a mural was found showing the astronomical positions of the planet Venus. You’ll have time to climb the Gran Basamento taking you above tree level. Here archaeologists found ceremonial offerings dating to around 1000 B.C. Your guide will also explain about the wildlife and medicinal plants that are used by the modern-day descendants of the ancient Mayan people. During the tour, you will reach a structure known as the Gran Basamento, which is not a pyramid, but an elevated platform. To access additional ruins located on the second level, it is necessary to climb approximately 40 steps. This ascent will give you a broader view and allow you to see other pyramids (ruins) that are not visible from the lower level.

Cruise the pristine waters off Sitka in search of marine life such as sea otters while listening to a naturalist elaborate on the most intriguing characteristics of the species. You may settle into a comfortable seat in the boat’s main cabin or remain topside on the observation deck. Either way, you will enjoy an uninterrupted view of the sea. As you scan the waters for marine life, the naturalist will describe how humpback whales feed here in the summer and how animals such as sea otters now thrive. The animals were nearly extinct due to aggressive fur hunting in the early 1800s, and their comeback is a wonderful success story. Other creatures commonly spotted include sea lions, porpoise, harbor seals and a huge variety of seabirds. Puffins are particularly easy to identify because of their bright orange beaks.
